M.F.'s BBQ Baked Beans

These beans are sweet, so if you are not a fan of sweet baked beans, you can just cut back on the sugar and molasses a bit. No problem.
  • 2 cups dry white beans, soaked overnight and cooked (or 3 15-ounce cans of Great Northern Beans)
  • 1 cup ketchup
  • ½ cup brown sugar
  • ½ cup molasses
  • 2 teaspoons dry mustard
  • 3 to 4 teaspoons of Lee & Perrins Worcestershire Sauce
  • salt and pepper
  • ¾ cup finely chopped onion
  • 3 serrano peppers, seeded and finely chopped
  • 5 slices of bacon
  1. While the beans are cooking in the saucepan (or draining in the colander), combine the ketchup, brown sugar, molasses, mustard, Worcestershire, pepper, salt, onion and peppers in a medium bowl or other container. Combine the canned or cooked beans with the sauce. Gently fold them over and over with a spatula to combine. You don’t want mashed beans so be nice to them.
  2. Pour the saucy beans into a baking dish. If I was trying to do a 9”x13” dish, I would probably double this recipe.
  3. Bake for 15 minutes at 350 degrees. Meanwhile, cook the chopped bacon until it is about halfway done. Put the semi-cooked bacon onto to the beans (I don’t even drain it) and return it to the oven. Cook for an additional 20 minutes or until the beans are bubbly and hot and the bacon is thoroughly cooked. I precook the bacon a bit because if I don’t the beans are bubbly and hot at the end of the cooking time but the bacon still looks undercooked.
  4. Remove them from the oven and let them rest for at least 5 minutes before serving.
