Tomatoes with Herbs de Provence

This is my very favorite kind of recipe…or non-recipe. It’s more of a good idea. It is pretty. It is easy. It is delicious and fresh. This came to me via a splendid friend named Laura Lucia. She does everything in a lovely way.

So here goes.  Don’t blink or you will miss it.Take a handful, or a big giant vat of grape tomatoes. Rinse them and allow them to dry. Put them in a bowl. Coat the tomatoes lightly with olive oil. Sprinkle liberally with chunky sea salt and Herbs de Provence. Toss. Chill. Serve as an appetizer with some toothpicks.Wasn’t that easy? Try this once and you will be making it all the time to carry to parties or to have on hand when your people are coming over for drinks.

Some other thoughts on this: When my mom makes this, she makes a ton. She puts them in big re-sealable plastic bags until party time. She will go ahead and add the herbs to the bag with the olive oil but she waits until she serves the tomatoes to add the sea salt so it doesn’t dissolve into nothingness. The crunch of the sea salt is an important part of the experience. You can also buy sea salt pre mixed with Herbs de Provence, (I know Williams Sonoma used to carry it) in which case…I would not try to add it early and just toss it all together right before you serve it.

    Laura Lucia would have wanted me to include that the lineage of this recipe extends beyond her and back to our pal Carol Carlock Vig and right past Carol on up to Carol’s mom.
